Firstly, sorry for the lack of posting love. Between ever-increasing hours at work and the constant undecidedness of what kind of new bicycle to buy online, my thoughts were somewhat elsewhere over the last week.
This also had a rather disastrous carry-on effect. Hardly any of my precious free time was utilised in the kitchen and if it wasn't for a sympathetic fellow resident in the household, I would well and truly be eating cold baked beans out of a tin (as we don't have one of those things you call microwaves here).
I'm not going to imply laziness upon anyone other than myself, but I will say that the kitchen was a bit neglected over the past week as the household used up the last days of summer outside as much as possible. As a result, any meal that could be made with minimal fuss was welcomed with open arms. Cue a trip to the market for a no-fuss lunch dish to cool down on a hot day.
marinated octopus and prawn vermicelli salad
8 prawns (we bought cooked, marinated prawns)
4 baby octopus, sliced in half (again, we bought cooked, marinated octopus)
150g vermicelli noodles
1 handful snow pea sprouts
1/2 lebanese cucumber, cut into thin ribbons
1/2 red capsicum, thinly sliced
1 red chilli, diced
1 handful coriander, chopped
1tbsp fish sauce
2tsp sesame oil
1tsp soy sauce
1tbsp palm sugar, grated
1tbsp lime juice
Cook the vermicelli by placing in a large bowl and covering with boiling water. Sit for 3-4 minutes before draining. Set aside (I use a small amount of oil to coat the noodles so as they don't stick together).
Place half the coriander, chilli, fish sauce, sesame oil, soy sauce, palm sugar and lime juice in a jug and whisk to combine. Add more of any ingredient to taste (as everybody likes it different).
In a large bowl coat the noodles in the dressing and add the sprouts, cucumber, capsicum, remaining coriander, prawns and octopus. Mix well and serve. How easy is that?
